2 cloves garlic minced
1/2 onion chopped
1 red bell pepper chopped
2 roma tomatoes chopped
4 eggs
1/3 c. feta cheese
1 tsp. italian seasoning
1 tsp. hungarian paprika
salt and pepper to taste
2 tbsp. chopped kalamata olives
1 tbsp. chopped parsley
Saute in olive oil garlic, onion, red pepper, tomato and seasonings. Break 4 eggs on top and sprinkle on feta cheese, olives and parsley. Cover with a lid and simmer on low until eggs are set. Enjoy!
This is a great recipe for when you have been a very bad girl and you need to increase your vegetable intake and cut out your white flour and sugar intake.

Our Little Quail Family
We have the cutest little quail family that has made their home on our front patio. At first the Mommy made her nest in my petunia pot and I had to stop watering or possibly kill her eggs. So finally they hatched one day about a week ago and of the eight eggs are five little babies that are toooo cute!! Three were duds I guess and didn't hatch. Anyway, check out the pics of our little family.

The Cavanaugh's visit

Vegetable Egg scramble
So I was in the mood for some eggs and vegetables so I diced up some red bell pepper and sauteed it with some spinach and minced garlic. Then I added two eggs, some cheddar and mozzarella cheese and it was really great with my teavana chai tea. While I was enjoying this delicious concoction, Josie started barking and I was delighted to see about four hot air balloons right in front of our property. It was an awesome morning with gorgeous weather in the desert!

Steak Salad
My sweet husband left me with one whole rib-eye and another half of a rib eye, and told me to just put it on salad. So I searched Pioneer Woman's site and found two wonderful recipes. I made my own salad-in-a-bag mix with romaine, sliced red cabbage, sliced red onion and grated carrot. Then I made PW's dressing recipe with soy sauce and put in a jar. Then I made PW's onion straws (WOW) to put on top!!! So I assembled the whole thing; salad, sliced perfectly grilled rib-eye, awesome asian inspired dressing and the onion straws that are to die for. I felt like I was in a fancy restaurant. Try it, you'll like it!!!!

Welcome to my blog. I decided to blog about about things I love, people, places and things. My family is what I love the most so I will be blogging about them a lot. This way I can add pictures and communicate with everyone whenever I want to and they can read it whenever they can. Sounds like a good plan to me. At the present time I am in Chicago with my beautiful daughter Darcy and her amazingly wonderful husband Eric and their three beautiful children.
